In the Vineyard with our Palisander Pinot Noir

The past few weeks have involved a lot of passes in the vineyard balancing a generous crop of Pinot Noir through fruit thinning, aiming to capture the palate weight and intensity that the Coal River Valley can yield.

It’s a bit sad to watch the unripe bunches drop to the ground after caring for them throughout the growing season. However, it’s essential to ensure the optimal flavour and concentration in the final bottle.
